Beef and Chipotle Burritos

Ingredients Instructions

  • 1.5 pounds boneless beef round steak
  • 1 can diced tomatoes (14.5 oz)
  • 1 onion, chopped
  • 1 or 2 canned chipotle peppers in adobo sauce, chopped
  • 1 teaspoon oregano
  • 1/2 teaspoon cumin
  • 1 clove garlic, minced

  • tortillas
  • cheddar cheese, shredded
  • salsa
  • shredded jicama (optional)
  • sour cream (optional)

  1. Trim fat from meat, and cut into small-bite-sized pieces.
  2. Put meat, tomatoes, onion, peppers, oregano, cumin, and garlic into crock pot. Cover and cook on low setting for 8 hours, or on high setting for 4 hours.

  3. Warm tortillas.
  4. Put meat, cheese, salso, jicama, and sour cream into tortillas.
