Ingredients
Sauce:
- 3 tablespoons olive oil
- 3 tablespoons flour
- 1/2 onion, minced
- 3 cups milk
- 1/4 teaspoon pepper
- 1/2 teaspoon thyme
- 1 bay leaf
- 1/2 teaspoon salt
- 1/4 teaspoon grated nutmeg

Instructions
Sauce:
- In sauce pan, saute oil, flour, and onions
- Add milk slowly, stirring continuously
- Add spices
- Cook and stir until it starts to thicken

Casserole:
- sauce (from above)
- 1 poind mostaccioli or penne noodles
- 4 ounces parmesan cheese, grated
- 3/4 pound fontina cheese, grated
- 1 cup bread crumbs

Casserole:
- Oven: 350
- Cook noodles in boiling water (10 minutes)
- Drain noodles
- Mix noodles, sauce, and cheese
- Put mixture in casserole dish
- Bake for 30 minutes.
