Camping Scones
We found this recipe on the internet somewhere. The scones work
great on a griddle over the camp stove.
To simplify things for camping, mix the dry ingredients at home, then
do the final mixing at the campsite.
Ingredients
- 2 cups flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 3/4 teaspoon salt
- 1/4 C sugar
- 3/4 cup buttermilk
- 1 stick butter, melted and cooled
- 1 egg, lightly beaten (or 1/4 cup egg substitute)
- 1/2 C dried cranberries
Instructions
- Mix dry ingredients well.
- Add wet ingredients and mix.
- Finally, add cranberries and fold in.
- Heat griddle to medium-low.
- Form into flattened balls, and place in oiled griddle.
- Cook, covered, four minutes on each side.
