Carrot Soup

Instructions

  1. In wide pan, melt butter.
  2. Add carrots, onion, salt.
  3. Cook over low heat until carrots are soft (5-7 minutes).
  4. Add broth and rice.
  5. Simmer until rice is tender (30 minutes)

  6. Puree in blender.

  7. Pour in bowls, garnish with croutons and serve.
