Japanese Chicken Salad
Ingredients
Croutons:
- 2 tablespoons salad oil
- 1/2 cup sliced almonds
- 2 tablespoons sesame seeds
- 1 package (3 oz.) oriental noodle soup mix (noodles crumbled)
Salad:
- 2 cups cooked boned chicken breast
- 4 cups finely shredded green cabbage
- 1/2 cup chopped green onions (with tops)
Dressing:
- 1/3 cup salad oil
- 1/3 cup rice vinegar
- 5 teaspoons sugar
- 1/2 teaspoon pepper
Instructions
- Heat oil in frying pan.
- Add almonds, sesame seed, noodles.
- Stir-fry until golden brown.
- Combine chicken, cabbage, onions, noodle mixture, and dressing.
- Salt to taste.
- Makes 6 servings.
