Vegetarian Lasagna
Ingredients
- 1 large jar spaghetti sauce
- 1 pound broccoli
- 1/2 of a 6 oz package of prewashed spinach
- 2 small cans mushrooms, drained
- 1 16 oz. carton ricotta cheese
- 1 egg
- Parmesan cheese
- lasagna noodles
Instructions
- Oven: 325
- Spread a layer of spaghetti sauce in the bottom of a 9x13 inch pan
- Add a layer of noodles (3 noodles)
- Mix broccoli, spinach, and mushrooms. Add vegetable layer to pan.
- Mix ricotta cheese, egg, and 1/4 cup Parmesan cheese. Add as next layer to pan
- Add second, and final, layer of noodles.
- Spread remaining spaghetti sauce, sprinkle parmesan cheese over the top,
and cover tightly with foil.
- Bake 45 minutes. Remove foil and bake another 15 minutes.
Let stand 10 minutes before serving.
