Vegetable Quiche
This was inspired by a recipe in "500 Greatest-Ever Vegetarian Recipes"
Ingredients
- one prepared pie crust
- two tablespoons water
- one 8 ounce package sliced fresh mushrooms
- one onion, chopped
- two carrots, chopped
- one dozen asparagus spears, chopped
- 3 eggs
- 3/4 cup nonfat milk
- one cup grated cheddar cheese
- 1/2 cup chopped parsley
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Instructions
- Oven: 350
- Simmer vegetables and water in a covered pan until soft.
- Mix eggs, milk, cheese, parsley, salt, pepper in bowl.
- Put vegetables in pie crust.
- Pour milk mixture over vegetables.
- Bake 20 minutes.
